The Marigold bun recipe as promised. I’m sorry it took so long. T11 made these when he was helping to look after his sisters whilst they were ill. Marigold is known for its antiseptic and antibacterial properties. I’m not sure the small amount used in each cupcake would be enough to have any effect, but they sure did taste good!
This is from Jekka McVicar’s Jekka’s Cottage Garden Herbs A book my son takes almost everywhere with him!
4oz butter
4oz caster sugar
4oz SR flour
2 eggs
1 teaspoon baking powder
2 tablespoons of fresh marigold petals
Mix everything apart from marigold petals until smooth and creamy, add 1 1/2 tablespoons of petals. Fold gently in. Place in bun tins. Sprinkle rest of petals on top of buns, with some brown sugar. Bake in oven for 25-30 mins (160 Celsius, 325 Fahrenheit, gas mark 3.)
Enjoy, the smell which comes from the oven is divine!
Is castor sugar like regular cane sugar here in the states?
Caster sugar is uk equivalent to your super fine sugar, I believe.
